Contact Adventure Guide in Waterloo and ask. They are the nearest whitewater store to the Elora Gorge and have staff that paddle there a lot.

Ah, fond memories, I learned how paddle on the Elora gorge in Febuary wearing a wetsuit and dish gloves, haha!
The Elora Gorge is dried up in the summer and becomes a trickle that swimmers play in and tube down the one chute that has a bit of flow.
There is not really whitewater in Southern Ontario in the middle of the summer, as it has all dried up.  Most rivers are low gradient and need spring rain on top of spring snowmelt to create rapids.
If you really want to paddle you will need to drive to upstate New York for a Raquette river release (check the AWA board for release info), or take a drive up to Ottawa for the Gatineau, the Rouge and the Ottawa River for big water play.
Enjoy swimming in the warm salt free beaches instead, it's the wrong season for kayaking.

If you can check out the Gull River in Minden Ontario. Amazing play and river run. about 2Km of straight class II-IV rapids. Its amazing, hope you get this before you leave. There is a shop in Minden called Boatwerks go see them and they can set you up with everything you need.

I was there last weekend and the level was perfect.
